Nobuyuki “Nobu” Matsuhisa (“Matsuhisa Nobuyuki”; produced March 10, 1949) is a star chef and restaurateur known for his fusion cuisine combining traditional Japanese dishes with South American (Peruvian) fixings.

When he was only seven years of age, his dad died in a traffic accident and he and his two older brothers were raised by his mom. After graduating from high school, he worked in the eatery Matsue Sushi in Shinjuku, Tokyo for seven years, and was encouraged with a frequent customer who had been a Peruvian entrepreneur of Japanese ancestry to start a Japanese restaurant in Peru. In 1973 at age 24, he moved to Peru (Lima) and started a restaurant together with similar name of Matsuei in partnership along with his patron. Nobu was not able to locate most of the ingredients he took for granted in Japan and needed to improvise, also it was here that he developed his unique type of cuisine that incorporated Peruvian fixings into Japanese dishes. He afterwards moved to Alaska, USA and started his own restaurant, which failed almost instantly as a result of fire that destroyed the eatery. In August 1993, the two opened up in venture NOBU to critical acclaim. Nobu restaurants were after started in Milan, London, Greece, Dallas, Tokyo, Honolulu, Moscow, Dubai, Budapest, and Hong Kong. Nobu’s camaraderie with De Niro got him a part in the 1995 Martin Scorsese movie Casino, as a rich businessman who had been a guest at De Niro’s casino. He also had small parts in Austin Powers: Goldmember, together with Memoirs of a Geisha, where he played a kimono artist.
