Nobuyuki “Nobu” Matsuhisa (“Matsuhisa Nobuyuki”; produced March 10, 1949) is a star chef and restaurateur known for his fusion cuisine combining traditional Japanese dishes with South American (Peruvian) fixings.
When he was only seven years of age, his dad died in a traffic accident and he and his two older brothers were raised by his mom. After graduating from high school, he worked in the eatery Matsue Sushi in Shinjuku, Tokyo for seven years, and was encouraged with a frequent customer who had been a Peruvian entrepreneur of Japanese ancestry to start a Japanese restaurant in Peru. In 1973 at age 24, he moved to Peru (Lima) and started a restaurant together with similar name of Matsuei in partnership along with his patron. Nobu was not able to locate most of the ingredients he took for granted in Japan and needed to improvise, also it was here that he developed his unique type of cuisine that incorporated Peruvian fixings into Japanese dishes. He afterwards moved to Alaska, USA and started his own restaurant, which failed almost instantly as a result of fire that destroyed the eatery.
